Clinton Sonntag Named Black Oak Casino Executive Chef

at Black Oak Casino is Clinton Sonntag.
With over ten years in the Culinary Arts,
his impressive career started in Del Ray
Beach, Florida as the Lead Cook at Damiano’s.
Sonntag continued his career path as Sous
Chef at the Sonoma Mission Inn serving
as the National Country Club Kitchen Manager
from 1997-2002. As the Room Chef at Harrah’s
Laughlin, Sonntag was responsible for the
Fresh Market Square Buffet Room and was
responsible for seasonal menu planning,
managing employees, and budgeting food,
labor and supply costs. Sonntag joins Black
Oak Casino after his last position with
Harrah’s Casino in Iowa as their
Executive Chef. Sonntag received a Specialized
Associates Degree from Florida Culinary
Institute and served in the United States
Marine Corps for eight years.
General Manager Ron Patel stated, “We

and enthusiastic Team Member starting work

experience and skills are a perfect fit to

our Casino Hotel and Conference Center”.
As the Executive Chef at Black Oak Casino,
Sonntag will oversee, and direct all food
and beverage-related operations, including
multiple restaurants, bars, menu development
and kitchen production.

by the Tuolumne Band of Me-Wuk Indians in
Tuolumne, California. The Casino encompasses
164,770 square feet of gaming and entertainment
options for the whole family, including 1013
slot machines, 24 table games, an automated
poker area, a non-smoking gaming area, three
restaurants, two casino floor bars, an interactive
sports bar, a state of the art bowling center,
a live entertainment lounge, a players club,
